Cheating with rice

When living the high life in London Darren and I discovered that Tesco’s sold frozen rice in portion sized bags to be heated in the microwave and served at a moments notice (usually with a chilled curry). We’d be horrifed when we didn’t have any in as the thought of COOKING some rice (and draining it as well mind) was far too much effort…

These days I just cook oodles of rice whenever we have any (like tonight), use what we need and then immediatly run cold water through the rest of the collander. After my dinner when I’m putting the things in the dishwasher I chuck a couple of portions into the freezer in a tuppaware with a bit of masking tape on the lid written in pen ‘Rice’. When rice is required all you have to do is zap it in the micro for 3 mins.
It sounds obvious but I just thought I’d jot it down in case it hasn’t occurred to everyone. Unfortunately for me my son hates rice which is a shame as could produce so many easy kiddy meals with this frozen treasure (rice & tuna & veg, rice & sauce, rice & veg curry, rice with grated cheese on top)

[NB: I do the same with mashed potato - make loads more than we need and then pop little mini portions of it in the freezer to accompany something the kids are having]
