Baked Quinoa (wheat free cooking)

I’m always very happy to try new recipes which are (a) easy (one pot cooking rocks!), (b) wheat-free (I’m not able to eat wheat), (c) cheap, (d) both Bealers and I both enjoy (harder than you’d expect).

This recipe in a Waitrose magazine (from the mag exchange box at the local library) jumped out at me as I had a box of Quinoa (pronounced ‘keenwah’) gathering dust in my cupboard as I didn’t know how to cook it. I can’t eat cous cous and this is a fabulous alternative. I’m now totally hooked and it’s my new easiest dinner to make when we have visitors. Takes 2 mins to prepare and 30 mins to bake.

  • 150g quinoa
  • 25g dried apricots (finely chopped)
  • 300ml hot stock
  • chicken fillets or thin pork loin fillets
  • juice and zest of 1 orange

oven to 200 degs

place quinoa in baking dish

stir in apricots and stock

place pork or chicken on top

drizzle with juice and zest

cover and bake for 20 mins

remove foil

cook for further 15 mins

allow to stand

quinoa should be swollen and liquid absorb

serve with seasonal green veg

    yum - I am trying this tonight!! We love quinoa. We boil it (like rice) and top with whatever we can find in the kitchen. I love how nutritious it is.
