How to make lovely lovely unprocessed chips/fries

On Saturday my kids had lunch with the other two bridesmaids for Madeleine and GB’s wedding. We were invited to their Grandma’s house who gave them all fish fingers and chips.

The chips were homemade and were and the most delicious I’ve ever tasted. I asked Carol what how she made them as I realised I always have a big bag of (highly processed) oven chips taking up most of our small freezer and had totally forgotten that my mother always made our chips out of actual potatoes. Not only were they much more delicious but cheapers,unprocessed and,if picked from our own garden later in the year will be fresh and organic.

The answer Carol gave me was that she uses Maris Piper or King Edwards potatoes as they are also good for roasting,fries in olive oil and does them on a fairly low heat for about 20 minutes. She did the whole batch for four children’s lunches all at the same time. I noticed that the chips were all perfect ‘chip shapes’and deduces afterwards that she had probably trimmed the spuds into blocks before she started chopping them up.

She had a warm plate with some paper towel waiting to put the chips on just before serving.
